An interview with Chef Shipra Khanna – Celebrity Bites

In a confab with Azafran Wellbeing Editor, Masterchef India, Season 2 winner Shipra Khanna shares her expert insights on healthy food and nutrition.

Tell us about your passion for food & cooking.

I started cooking at the age of 9 and from then onwards my interest kept growing. I learned from my mother and grandmother and then my inspiration became my daughter. Cooking is my lifeline and has been the only constant thing in my life.

The food world is talking a lot about extra virgin olive oils. What is your take on this?

Of course, anything which is processed with heat loses its food value and so does oil. Hence cold pressed oils are more healthy for consumption as it is less processed.

How would you describe your style of cooking, ie., your cooking personality.

I love Fusion cooking. Simple and clean flavours with an innovative style.

You have said, “I love fusion, so fusion is always a part of my dishes that I love to create including desserts.” How much do people welcome fusion dishes? Any specific dishes you would like to mention here? 

People in India are now accepting international cuisines and appreciate innovative ideas when it comes to food which was not so till a few years back. Fusion is a very unique and innovative style of cooking and people not only in India but around the world have started accepting and appreciating it. Yam mousse, garam masala carrot cake, and tandoori chicken patê are a few to name.

Which cuisine does Chef Shipra find the most exciting? Why?

I love food and with a range of cuisines to choose from, choosing just one is unfair. Nonetheless, I love Japanese and Peruvian because of the knife skills!

What are Chef Shipra’s signature dishes?

Garam masala carrot cake, Shipra’s pulao and stew, Yam Mousse, Tandoori chicken paté are a few to name.

What advice would you give home chefs who are inspired by your style of cookery?

Cooking is an art which one is born with, you can brush your skills with learning and practice. Not going to a school and learning should not be a hindrance in the way of your passion for cooking. If you know this art then be proud of it and make people feel happy and special by your cooking skills.
